Bacon BBQ meatloaf
Ingredients:
2 lbs. of ground beef
1 1/2 C panko or oats
2 eggs
1 C BBQ sauce
2 Jalapenos chopped
2 T Salt
2 T Pepper
9 slices of bacon
2 C Cheese
Toppings:
1 C Brown Sugar
Sprinkle of red pepper flakes
1 C BBQ Sauce
Directions:
In a bowl mix ground beef, salt, pepper, 1 cup of BBQ sauce, jalapeno peppers, eggs and panko (or oats) and mix till combined. Set it aside and preheat the oven to 400 degrees.
Take a cookie sheet and lay the 9 slices of bacon down, one right next to each other no spaces. Take your meat mixture and put it on top of the bacon and spread it out so it covers the bacon. Take your cheddar cheese and sprinkle over the top of the meat. Now here is the tricky part. You will now roll the bacon and meat up. Take one side making sure you have the bacon and meat together and roll it up slow and tight. It is tricky so do not feel defeated if you cannot get it the first time. When you get it rolled up make sure it is tucked.
Get a pan with sides and lay a cooling rack inside and spray with nonstick spray. Now gently lay your meatloaf on top. Now get your brown sugar and pat it all over the bacon. Top with red pepper flakes. Put it in the oven till bacon is looking crispy. When there is about 10 minutes left you will brush it with BBQ sauce and bake it till its caramelized. Take it out of the oven and let it rest. Carefully move it to a platter and enjoy.
