Chicken Jalapeno Corn Soup
Ingredients:
2 Chicken breasts cooked and shredded
(or you can use a rotiserary chicken)
2 chopped jalapenos no seeds
1 bag of frozen corn
1 lb. of bacon diced up
32 oz chicken broth
2 C Heavy Cream
1 Tsp Red Pepper flakes
Spoonful of garlic
1 bag of diced frozen potatoes
salt and pepper to taste
Directions:
I use the crockpot usually to cook my chicken, but you do not need to. Once your chicken is cooked shred it and add it to a saucepan. In a skillet add your diced bacon, red pepper flakes and diced jalapenos. Cook till bacon is cooked. Drain any fat off and put it on a paper towel. In the saucepan with your chicken add your bacon mixture, add potatoes, corn, broth and seasonings. Let it cook till potatoes are done. Now add your heavy cream and cheese and heat till melted. Enjoy!!
