Chicken Pot Pie
Ingredients:
4 Boneless Skinless Chicken breasts
2 cups of mixed vegetables or a bag of frozen mixed vegetables
1 3/4 C Chicken broth or 1 can of broth
1/3 C flour
1/3 C butter
2/3 C Milk
1/3 C of onion
1 Tsp celery seed
1/2 tsp celery salt
1/2 tsp garlic powder
1/2 tsp onion powder
Sprinkle of pepper
2 pie crusts
Directions:
Take your chicken and cut it into chunks and put it into a saucepan. Take your mixed vegetables and add them on top of the chicken, and cover with water. You will boil this till the chicken is done. While this is boiling, you can work on the sauce. In a big skillet put in your butter, and let it melt. While it is melting now is a good time to get all your seasonings, and liquids measured. Things will happen fast so its better to have it all ready. When the butter is melted add your flour and whisk till combined. Add in your milk, broth and seasonings and whisk till the sauce starts to thicken up.
When the thicken mixture is ready take it and strain it and set it aside. Grab your pie dish and put in your bottom crust and add your chicken mixture, and the sauce. Cover with the second crust. Cut a slit on the top. Bake at 350 till crust is golden brown and bubbly.
