Pancetta Mac N Cheese
Ingredients:
1 package of pancetta
1 onion chopped
1 T white wine
1 T flour
1/2 Tsp salt
1 tsp garlic powder
1 tsp onion powder
1 block of Monterrey jack diced
1 block of Velveeta diced
1/2 C half and half
1/2 C milk
1 Box of Spiral Noodles
3 T butter
Directions:
Cook your pancetta and chop it up into pieces, then set it aside. Dice up your onions really small, put onions in the pan with some olive oil and cook till they start browning. Put wine in it and add your pancetta. Heat it up and take it off the heat. Boil your water for your noodles, once its boiling add your noodles. While the noodles are cooking you will need to start your cheese sauce. Take a skillet and melt your butter in it, put in your flour and whisk till combined. Add your milk and half/half, heat it up till it starts thickening. Add in your cheese and whisk till it's all melted. Add in your pancetta/onion mixture and stir it up. When your noodles are done, strain them and add them back in the pan. Add your cheese sauce and stir till combined. Eat and enjoy!
