Pineapple Upside Down Mini Cakes
Ingredients:
2 Cans of Dole Pineapple Rings
1/3 C Butter
2/3 C brown sugar
1 package of yellow cake mix
9 cherries cut in half
Large Muffin Tin
Directions:
Melt your butter, mix in your brown sugar. Now take a muffin tin and add this butter mixture evenly on the bottom of each cup. Now drain your pineapple rings, you will want to save the juice. Put your pineapple rings on the bottom of each muffin tin and then add your cherries cut side up. Now mix up your yellow cake mix and add pineapple juice instead of water in the cake mix. Now put 1/3 C of batter over the pineapple and butter mixture. Bake for 20 minutes until toothpick comes out clean. Let it cool before flipping out onto a cooking sheet. Make sure to go around the edges to help it come out nicely.
