Caramel Apple Cheesecake
Ingredients:
1. Make this Salted Caramel sauce recipe and let it cool.
Crust:
2 Cups of crushed graham crackers
1/2 C Butter melted
2 T Sugar
Cheesecake
1 1/2 C of finely diced apples
(I use granny smith apples for this. Their tartness helps with this sweet cheesecake.)
2 C Sour Cream
4 Boxes of cream cheese
6 eggs
2 Tsp Vanilla
1/2 C Flour
1 C Sugar
3 Spoonfuls of Salted Caramel sauce
Directions:
First, a tip I was told is to grease a spring form pan and cut out parchment paper to match the width of the springform pan. This will make it easy for the cheesecake. Now add your graham crackers, butter and sugar and mix. Press it into the bottom of the springform pan. Bake for ten minutes. While it is baking you can work on the cream cheese mixture. Take the springform pan out and let it cool.
In a mixing bowl add your cream cheese, then add flour and sugar mix well. Add one egg at a time, add in your sour cream and vanilla. Fold in the finely diced apples. Now add your salted caramel sauce and take a knife and swirl it around.
Now make thinly sliced apples to add to the top of the cheesecake. You do not want them to thick. They need to be able to cook and become soft. Bake it at 375 for 55 minutes and take it out and let it cool for 20 minutes before you release from the pan. Let it chill for 2-3 hours.
Top it with drizzle of salted caramel sauce over it. Be liberal with it. Enjoy.
