Cranberry Orange Oatmeal Cookies

                                                                     






Oatmeal Cranberry Orange Cookies

Ingredients:

1 C Butter
1 C Sugar
1 C Brown Sugar
2 Eggs
1 tsp Vanilla
1 T juice of an orange
2 tsp of orange zest
2 C Flour
1 Tsp Baking soda
1 tsp salt
1 1/2 Tsp cinnamon
3 C Oats
1 C Chopped Cranberries

Orange Glaze:
1 C Confectioners Sugar
2 T Milk
1 Tsp juice of an orange
1/2 tsp zest

Directions:

In a bowl cream your butter, sugar, and brown sugar. Then add one egg at a time, orange juice, and orange zest and mix well. Add vanilla and mix again. Put in your flour, baking soda, salt, oats and cinnamon, mix it well. Add in your chopped cranberries and mix well. Drop by the spoonful on a cookie sheet and bake at 350 till cookies are done.

Crockpot Applesauce

                                                                   




Crockpot Applesauce

Ingredients:

8-9 apples chopped and cored
1 3/4 C Apple Cider
1 C Sugar
1 Tsp cinnamon
Sprinkle of nutmeg

Directions:

Core, peal, and chop your apples till the crockpot is filled but not stuffed. Then pour in your apple cider, pour in your cup of sugar, and stir it up. Then add cinnamon and nutmeg, stir it up.  Cook on high for 4 hours till the apples are nice and soft.  Make sure you stir every hour.  Take your blender and fit as many apples in it as you can. Hit the chop then purée button. If you do not have blender a food processor would work.  Blend it till its smooth.  Pour it in a bowl. Do this till all the apples are blended and in a bowl. Let the sauce cool down and then you can put it in freezer bags and lay flat in the freezer.

Steak Fajita Stuffed Peppers

Ingredients:

5 Peppers
Steak tips cut into bite size pieces
1 1/2 C rice (not instant)
3 T olive oil
1 onion diced
1 can of diced tomatoes
2 C chicken broth
1 C Water
Fajita seasoning packet
cheese

Directions:

In a pan put your diced steak and cook till it's almost done, put it in a bowl.  In a skillet add your 3 T of oil and heat it up, add your rice and onions. Cook till onions are tender and rice is turning golden. Add your chicken broth, water, fajita seasoning and diced tomatoes. Stir and cook till rice has absorbed the water. Add your steak and stir. Cook 5 minutes and set aside. 
Take the tops off of the peppers and making sure seeds are out.  Put them in a pan or crock pot. Take your steak rice mixture and stuff the peppers. I personally cooked these in the crock pot for 2 hours on low. Then I took them out topped with cheese and baked them. Take out and enjoy1

French Onion Soup


Ingredients:

2 Vidalia onions sliced

1 purple onion sliced

(6C total)

1/3 C oil

1 T sugar

1/2 tsp pepper

1 T white wine

6 C beef broth

1 loaf of French bread

1 C fontina cheese

1C Italian shredded cheese


Directions:

In a saucepan put your thinly sliced onions in with oil, pepper and sugar. Cook till they start turning golden. Add your white wine, cook it down and then add your beef broth. Let it boil, then turn it down and let it simmer for half hour. Put your soup in an oven safe bowl and put a slice of bread on top. Add both cheeses and cook till golden. Enjoy

Fruit Crumble Cups


 

Fruit Crumble Cups


Ingredients:

1-2 Cans of Grand Biscuits

1 Apples diced or pie filling

1/4 tsp apple pie spice

2 tsp sugar

1/4 C water

Topping:

1/2 C Brown Sugar

Handful of chopped walnuts

1/4 C Old fashioned oats

3 T butter softened

Sprinkle of apple pie spice

Directions:

If you have a Pampered Chef square pan you can use it to make these, if not use a muffin tin. It will work the same.  Take your muffin tin or brownie pan and spray it with nonstick spray. Take your biscuit and spread it out and place it in the muffin hole or brownie square. This will make it a cup. Bake at 350 till almost done.  While these are baking take your apples and cut them up and add spices, sugar and water. Cook till they are soft 5-10 minutes.  Take the biscuits out and its puffed-up way too much you can take a spoon and take some of the biscuit out. Take your apple mix and put it inside the cup. Make your topping and add it to the top. Bake at 350 till nice and hot.

Ingredients:

Pastry Puff Cups

1 Small can of blueberry filling

1 box of lemon pudding 

(make according to the box)


Lemon Whip Cream:

1 box of whipping cream

3 T sugar

1 tsp vanilla

1 tsp lemon juice

Directions:

Bake the pastry puffs according to the directions. Once they are done, let them sit on a cooling rack till they are cool. Then take a knife and go around the circle on top. Put it off. Take a spoon and fill the bottom with blueberry pie filling, then take some of the whip cream and put it in a piping bag or spoon it in. Next top it with lemon pudding. Now pipe in a circle with whip cream. Keep going till they are all done. Garnish with grated lemon peel.

Garlic Dill Green Beans with White Wine

Ingredients:

2 lbs. Fresh Green beans
3 cloves of garlic chopped
1 T Dill
1 T Olive Oil
1/4 C white Wine
Sprinkle of Onion Powder
Sprinkle of Salt

Directions:

In a skillet put your 1T of olive oil and heat it up. Next do a rough chop of the garlic and add it to the skillet.  Stir it around till it starts to turn golden.  Add in your green beans, and dill weed. Toss to coat. Cook on medium heat. When green beans get nice and warm add in another tablespoon of olive oil and white wine. Then add your salt and onion powder. cook till the wine has been reduced. The green beans need to cook only till they are crisp not soggy. Enjoy!

Ham and Cheese Pastry

                                                                 


Ham and Cheese Pastry


Ingredients:

1 Pastry sheet 

3 Thick cut slices of ham of the bone

1 block of Velveeta

1/4 c milk

2-3 T of butter

Course Sea Salt


Directions:

Take your pastry sheet that is thawed and lay it flat on a cookie sheet. Dice up your Velveeta and put it in a saucepan with 1/4 cup of milk.  Heat it up till you have a cheese sauce.  Let it sit with no heat underneath it. Take a knife and on the two outside of the pastry sheet slice fringes. Dice up your ham and put it in the middle part. Then take your cheese sauce and pour it all over the ham. Now take one fringe and lay it down over the ham and then alternate with the other side till it's a braided look. You want the ends closed so none of the goodness will leave. 

Take about a tablespoon of butter and drizzle over the top. Sprinkle with course sea salt. Bake at 350 till pastry is golden brown.

Hawaiian Cheeseburger

                                                                 


Hawaiian Cheeseburger


Ingredients:

1 package of ground beef 

(Adjust it for your family)

1 can of Pineapple rings in pineapple juice

Bacon

Swiss Cheese

Caramelized onions


Directions:

Put your drained pineapple rings in a bowl. Save your pineapple juice. Mix your juice and teriyaki together, pour on top of pineapples. Let it marinate. While it's soaking up the wonderful flavors you can work on your patties. Start cooking your hamburgers, I prefer the grill, but skillet is fine too. When the burgers are done, top with Swiss cheese. Cook your bacon and set it aside. In a skillet that's clean add 3 T of olive oil and add thinly sliced onions. Heat and cook. Halfway through sprinkle with some sugar till the onions turn a nice caramel color. Set them aside in a bowl. Now take your pineapple slices and grill or use a skillet to cook them up. 

Now to assemble! Take a soft roll and put your hamburger on it, top with grilled pineapple, onions and bacon then add the top. Enjoy!

Hawaiian Pizza

                                                                     


Hawaiian Pizza


Ingredients:

Pizza Dough (Just use your favorite)

1/2 Jar of pizza sauce

1/4-inch ham off the bone from the deli

1 can of pineapple slices

Bag of Mozzarella

Directions:

Take your dough and spread it on a greased pizza pan or cookie sheet. Poke holes with a fork. Spread your pizza sauce and then slice up your ham and add it. Now take your pineapple slices and cut it into fours. Lay them all over the pizza. Top with shredded mozzarella. Cook at 350 till pizza is cooked and cheese is golden.

Hawaiian Shredded Pork

                                                                 


Hawaiian Shredded Pork 

Ingredients:

Pork Shoulder

1 Container of BBQ Sauce

2 C Pineapple Juice

1 Large can of pineapple chunks

1/4 C Brown Sugar


Directions:

Put pork shoulder in the crock pot and put slits in it. Then pour 1/2 C pineapple juice on top. In a bowl mix rest of pineapple juice, brown sugar, and the whole container of BBQ sauce. Whisk till combined. Pour over the pork. Cook on low for 6 hours, then cook on high till it shreds. Now add your pineapple chunks (I diced them up) Cook on high for a little bit.
