Jalapeno Popper Cheese Balls

 

                                                                                    
    Jalapeno Popper Cheeseballs

Ingredients:

5 jalapenos
1 box of cream cheese softened 
1 Container of shredded pepperjack
1 C Sour Cream
1 package of bacon crumbles
1 C Green Onions
3 1/2 C Gluten Free Panko

Directions:

Take your jalapenos and cut them open, remove seeds and dice them. Set it aside in a bowl. Add your green onions chopped, 2 C gluten free panko, bacon, pepperjack cheese, sour cream and cream cheese. Now take a spoon and mix it together as best as you can. I ended up using my hands to mix it together.  Now take another cup and half of panko and lay it on a sheet of aluminum foil. Make balls with the jalapeno mixture and roll them in the panko mixture. Put them on a cookie sheet. Do this till they are all done and put them in the freezer till they are hardened. Preheat oven to 400 and bake them.

Gluten Free Sweet and Smokey Bruschetta Chicken


        Gluten Free Sweet and Smokey Bruschetta Chicken  

Ingredients:

1 Container of Sweet and Smokey Porq Panko GF
1 egg
Chicken Breasts cut thin
Salt and Pepper
1 Pint of Cherry Tomatoes
Garlic Cloves
1/4 C Sliced thin basil
Balsamic Glaze
Mozzarella slices or balls cut in half

Directions:

Take your slices of chicken and trim them. Set them aside. Next in a bowl crack an egg and whisk it and set it aside. Now take your gluten free panko and pour it onto an aluminum foil or plate. Take your chicken slices and tip them in egg, salt, pepper, then panko. Lay them on a cookie sheet or glass baking dish. Pour out the tomatoes, and 2 garlic cloves chopped. Bake in the oven at 400 till chicken is done and panko is crispy. When they are done lay them on a platter surrounded by the roasted tomatoes, garlic. Add your fresh basil and mozzarella to the top and drizzle with balsamic glaze. Enjoy!

Gluten Free Broccoli Cheese Soup

 


Broccoli Cheese Soup

Ingredients:

2 heads of broccoli

1 stick of butter 

1 32 oz box of Chicken broth

16 oz heavy Cream

1 2C bag of Colby Jack or whatever cheese you want

1/4 C Measure by Measure King Arthur Flour GF

1 T Salt add more if needed

1 T Pepper

Directions:

Cut up your broccoli into small chunks and set them aside. In a pan add your stick of butter and melt it. When it is melted, add in your flour, salt and pepper. Whisk till combined. Now add your heavy cream and chicken broth and whisk till its all combined and smooth. Add in your cheese. Whisk till its smooth and the cheese has melted. You will cook it on low till the broccoli is tender but not mush. The liquid will thicken up. When the broccoli is tender then turn it off and enjoy!

Maple Pecan Ice Cream


 Maple Pecan Ice Cream

Ingredients:

1 Small package of pecans

1 small container of Whipping Cream

1 Can of Condensed milk

1/4 C Maple Syrup

1 Tsp Vanilla

2 Tsp Sugar

Directions:

In a mixer bowl whipping cream till it's stiff. Slowly pour in the condensed milk, maple syrup, vanilla and sugar and fold them in. Then add the pecans. Pour it into a freezer safe container and freeze it for a full day. Eat and enjoy

Candied Bacon Maple Coffee Cake

 


Maple Bacon Coffee Cake

Ingredients:

1 1/2 C Flour

1 Egg 

1/4 C Canola Oil

3/4 C Sugar

1/2 C Milk

1/4 C Maple Syrup

2 Tsp Vanilla

Candied Bacon

Bacon

Brown Sugar

Maple Syrup


Directions:

Put a cooling rack on top of a cookie sheet and spray it with nonstick spray.  Now lay down your bacon and brush both sides with maple syrup and sprinkle with brown sugar. Bake for 15-20 minutes. Take it out and let it cool. Once it is cool you can chop it up and set it aside. 

Now mix all of your coffee cake ingredients and pour into a greased glass baking dish. Now in a bowl add oats, brown sugar and drizzle butter in it and top the coffee cake with it. Then add your candied bacon. Bake it at 350 till you stick a knife in and it comes out clean.  Serve with warm maple syrup.

Strawberry Rhubarb Pie


Strawberry Rhubarb Pie

Ingredients:

2 C Strawberries Sliced
2 C Diced Rhubarb
3/4 C Sugar
1/3 C Flour
1/4 Tsp Salt
Two Crusts

Directions:

In a bowl add your sliced strawberries and rhubarb. Add in your sugar, flour and salt. Mix till combined. In a pie plate spray it. Lay down a bottom crust and add filling. Now unroll the top crust and cut strips to make a lattice. Weave it on top. Brush top with egg wash. Bake at 350 till crust is done. It will take 25-30 min.

Chipotle Pasta Salad

 


Chipotle Ranch Pasta Salad

Ingredients:

1/2 Box of your favorite Pasta
1/2 C Chipotle Ranch
Red and Orange Pepper 
1 Tomato 
1 Cucumber

Directions:
Boil your pasta according to instructions, strain them and rinse it with cool water. Put in a bowl. Chop up your peppers, cucumber and tomato. Add it to the pasta with the 1/2 C of chipotle ranch. Mix till all is combined. Eat and enjoy.

Zucchini Boats

         


Zucchini Boats

Ingredients:

4 Zucchinis 

1 C Cooked Rice

1/2 C onion

1 Garlic Clove minced

1 C Orange Pepper

1 can of diced tomatoes

1 lb. of ground beef

2 T Garlic Salt

1 C Sharp Cheddar Cheese

Directions:

Cut and length ways and scoop the insides out of the zucchini.  Start your rice according to directions. Now brown your ground beef, while those are cooking dice up the inside of the squash, onion, peppers, and sautee them in 1 T of butter. Once they are done mix them in with the rice, diced tomatoes, add ground beef, and 2 T of garlic salt. Mix till its combined. Now fill your boats. Cover with aluminum foil. Bake 400 degrees till your zucchini is soft. Add cheese and cook till cheese is melted.

Apple Rolls

 


Apple Rolls

Ingredients:

1 Tube of Crescent Rolls
1 Chopped Apple into wedges
1 Stick of butter softened 
1/2 C Sugar
1 T Apple Pie Seasoning

Directions:

Chop your apples into wedges and set aside. In a bowl mix your sugar and apple pie seasoning and set that aside. Take your crescent rolls and unroll them taking apart the triangles. Take each triangle and spread butter on it, and sprinkle with sugar mixture. Then roll your apples up and set them in a small baking dish. Do this till they are filled up.  Melt the rest of your butter and pour it on top and sprinkle with apple pie seasoning.  Cover with aluminum foil and bake till apples are soft. Take off the foil and let the rolls brown. Take it out and let it cool.

Chicken Rice Soup

 


Chicken Rice Soup

Ingredients:

3 C Chicken Broth

1 Shredded boneless skinless chicken breast

2 C Cooked Rice

2 C Frozen mixed vegetables

2 sliced celery

1 T rosemary

2 Tsp Pepper

Pinch of Salt

Directions:

In a saucepan put in your frozen vegetables, one cup of chicken broth, celery and rosemary. Cook for about ten minutes. Next add your shredded chicken, cooked rice, salt, pepper and rest of the chicken broth.  Cover and cook on low for about an hour. ENJOY

Sandwich Rolls

 



Sandwich Rolls

Ingredients:

1/2 C Warm NOT hot water

2 1/4 Tsp Yeast

1 T Sugar

1 1/2 C Warm NOT hot water

1/3 C olive oil

4 C Flour

3 T Sugar

2 Tsp Salt

Directions:

In a bowl add your 1/2 C of warm water, yeast and sugar. Mix gently and let it sit for 5 minutes to let the yeast activate. Once its bubbling and foamy add in your 1 1/2 C of warm water, olive oil, flour, sugar and salt. Mix till it forms a ball of dough. Get a bowl and grease it. Take your ball of dough and put it in the bowl rolling it around to coat it. Cover it with a cloth or paper towel and let it double.  Once it has doubled you can take it and put it on a cutting board. Cut it into 8 pieces or more. Take those 8 pieces and shape them into balls. Put them on parchment paper on a cookie sheet. Cover and let it rise about 10 minutes. Bake at 350 till they are golden brown. Take them out and put them on a cooling rack. Brush with butter.

Steak Kabobs

     



Steak Kabobs

Ingredients:

Marinade:

1/2 C Soy Sauce

1/4 C BBQ Sauce

2 T of Cherry Coke or regular

Sprinkle of Nutmeg

Sprinkle of Ginger

Sprinkle of Garlic powder or minced garlic

Kabobs

Kabob Sticks

2 Orange Peppers

2 Green Peppers

2 Onions

Steak tips

Whole garlic

Directions:

Take all the ingredients for the marinade and whisk it in a bowl. Add your steak tips and marinate for 2 hours. While it is marinating, soak your wooden sticks for 2 hours. Chop all your vegetables into chunks. When meat and sticks are ready start assembling them. You can do them in any order you want to do. Just keep repeating till you have finished all the meat and veggies. Now you can grill them or cook them in the oven. If you do them in the oven, do it at 350 till meat and veggies are cooked.

Ingredients:

6 Potatoes

1 green Pepper

1 Onion

2 T Garlic minced

Sprinkle of garlic salt

Sprinkle of pepper

Directions:

Peel your potatoes and cube them and set it aside. Get a pot of water boiling, add your potatoes. Only boil for 3 minutes. While they are boiling, dice your peppers and onions. Set it aside.  Take out a skillet and add 1/4 C oil and get it hot. Take your potatoes and strain them making sure the water is totally out. Add your potatoes, peppers and onions. Then add a teaspoon of salt and pepper and 2 tablespoons of garlic. Cook until the potatoes are golden brown.  If you want them crispier then you can cook them longer.

Bacon Spaghetti

 


Bacon Spaghetti

Ingredients:

1 lb. of Bacon
Spaghetti
Red Pepper flakes (optional)
Minced Garlic I use several Spoonfuls

Directions:

Get your water boiling for the spaghetti. While it is heating up, you cut your bacon into bite size pieces and put them in a skillet and cook them till they are close to browning. Add your garlic and finish the bacon. Strain most of the grease off saving some for the pasta. When your water is boiling add your pasta. When the pasta is done, drain the water off and add your bacon, the rest of the grease, and red pepper flakes. Toss to coat. Eat and enjoy.

Garlic Pasta

 




Garlic Pasta

Ingredients:

1/2 box of Pasta

4 Garlic cloves minced

4 T Olive Oil

2 Tsp Salt

1 Tsp Cracked Pepper

4 T Butter

1/4 C Grated Parmesan

Directions:

Boil your pasta according to instructions, strain it and set it aside. In a skillet melt your butter, add oil, garlic, salt and pepper. Take your cooked pasta and toss it in the butter mixture. Sprinkle with grated parmesan.

Caramel Apple Cheesecake

 


Caramel Apple Cheesecake   

Ingredients:

1. Make this Salted Caramel sauce recipe and let it cool. 

Crust:
2 Cups of crushed graham crackers

1/2 C Butter melted

2 T Sugar

Cheesecake 

1 1/2 C of finely diced apples 

(I use granny smith apples for this. Their tartness helps with this sweet cheesecake.)

2 C Sour Cream

4 Boxes of cream cheese

6 eggs

2 Tsp Vanilla

1/2 C Flour

1 C Sugar

3 Spoonfuls of Salted Caramel sauce

Directions:

First, a tip I was told is to grease a spring form pan and cut out parchment paper to match the width of the springform pan. This will make it easy for the cheesecake. Now add your graham crackers, butter and sugar and mix. Press it into the bottom of the springform pan. Bake for ten minutes. While it is baking you can work on the cream cheese mixture. Take the springform pan out and let it cool.

In a mixing bowl add your cream cheese, then add flour and sugar mix well. Add one egg at a time, add in your sour cream and vanilla. Fold in the finely diced apples. Now add your salted caramel sauce and take a knife and swirl it around.  

Now make thinly sliced apples to add to the top of the cheesecake. You do not want them to thick. They need to be able to cook and become soft.  Bake it at 375 for 55 minutes and take it out and let it cool for 20 minutes before you release from the pan. Let it chill for 2-3 hours. 


Top it with drizzle of salted caramel sauce over it. Be liberal with it. Enjoy.
