Chocolate Peanut Butter Cheesecake

         


Chocolate Peanut Butter Cheesecake

Ingredients:

Crust:

1 package of Oreos smashed

5 T butter melted

Cheesecake Mixture

4 8oz boxes of cream cheese

1 C Sugar

1/2 C Flour

6 eggs

2 C Sour cream

2 Tsp Vanilla

1 1/2 C Creamy Peanut butter

Drizzle on top

Semi-sweet chocolate chips melted


Directions:
In a bowl mix your crushed cookies and butter and put them inside a greased springform pan. Press them down and up on the sides a bit. Put it in the freezer for little while, so you can work on the cheesecake batter.

In a bowl mix cream cheese and peanut butter together. Next add your eggs and beat until creamy. Add your flour, sugar, sour cream and vanilla. Mix till combined. Take your spring form pan out of the freezer and pour the cheesecake batter in the springform pan. Bake it at 350 degrees for an hour and fifteen minutes. You want the middle firm. Stick a knife in it if it comes out clean then it is done. 

Set it out on a cooling rack and let it cool for twenty minutes. After 20 minutes you can take a knife and go around the edges before releasing the springform pan. Release it. 

Now melt your semi-sweet chocolate chips and pour them into a baggy or piping bag and drizzle all over the top of the cheesecake. Top with extra chocolate chips. Put it in the fridge to cool more. ENJOY

Swiss Shaved Steak Sandwiches

             


Swiss Shaved Steak Sandwiches

Ingredients:

1 package of Shaved Steak

1 Pepper sliced thin

1 onion sliced thin

2 Garlic Cloves minced

6 slices of Swiss cheese

Au Ju Sauce (packet is fine)

Spread:

Softened butter

1 T Garlic Salt

Directions:

In a pan put your shaved steak, and cook it till it's brown. Put it in a bowl and set it aside. Take that same pan and add your onions, peppers, garlic and olive oil. Cook till peppers and onions are cooked. 

In a saucepan mix up your au Ju sauce when its heated up put in your shaved steak and let it simmer. Take your rolls and slice it to where it opens up flat. Spread your butter and sprinkle with garlic salt. Put it in a skillet till its golden brown.  Lay it on a cookie sheet and add your meat, peppers and cheese. Put it in the oven till cheese has melted.

Blueberry Oat Muffins

 


Blueberry Oat Muffins

Ingredients:

1 Egg

1 C Sour Cream

1/3 C Oil

1 Tsp Vanilla

2 C Flour

1/2 C Oats

1/2 C Sugar

1 1/4 Tsp Baking Powder

1/2 Tsp Baking Soda

1/4 Tsp Salt

1 1/2 C Blueberries


Toppings:

1/4 C Brown Sugar

2 T Butter

1/3 C Oats

Directions:

In a bowl mix your egg, sour cream, oil and vanilla till its combined. In another bowl mix your flour, oats, sugar, baking soda/powder and salt. Mix it up and add it to your wet mixture. Mix it till its combined. Add your blueberries and fold them in.  Grease or use muffin liners and add your muffin batter.

In a bowl add your brown sugar, softened butter and oats till it makes a crumble.  Add the crumble to each muffin. Bake at 350 for 20 minutes or until toothpick comes out clean.

BBQ Roast Beef Sandwiches

 


BBQ Roast Beef Sandwiches

Ingredients:

BBQ Sauce:

2 C Ketchup

1/2 C Apple Cider Vinegar

1/4 C Coca Cola

1/3 C Brown Sugar

1 Tsp Onion Powder

1 Tsp Dry Mustard

1/2 Tsp Garlic Salt

BBQ Roast:

Roast

BBQ Sauce you made

Directions:

Mix all the ingredients to the BBQ sauce and whisk till all combined. Put your roast in the crock pot and pour the BBQ sauce over it. Cook on low for 3 hours then cook on high till the roast shreds easy.  Serve on rolls.

Garlic Parm Bread


 Garlic Parm Bread 

Ingredients:

1/2 C Warm Water
2 1/4 Tsp Yeast
1 T Sugar
1 1/2 C Warm Water
1/3 C Olive Oil
4 C Flour
2 T Sugar
2 tsp Salt

Garlic Parm Mixture:

1 stick of super soft butter
1 T Garlic Salt
3 T Grated Parmesan
1 Tsp Parsley

Directions:

In a bowl add your half cup of warm not hot water, yeast and 1 T of sugar. Let it sit for five minutes. Once the yeast is all bubbly and activated you can add in your 1 1/2 C warm water, olive oil, flour, sugar and salt. Mix till it forms a dough. The dough should not be wet. Take it and cover it in a greased bowl for an hour till its doubled. 
Once it has doubled split the dough in half, let the other half aside. This recipe makes two loaves. Now take one half and cut it into three pieces and make it into a rope. You will braid it and fold the ends under and put it in a greased loaf pan. Do the same for the second half. Let it rise for an hour or until doubled. While it is rising for the second time make your garlic mixture. 

Semi melt your butter with seasonings and pour over both breads when they have doubled in size. Bake at 350 until golden. Take it out of the oven and let it sit for a few before taking it out of the loaf pan. Eat and enjoy.

Garlic Potato Strings

 


Garlic Potato Strings

Ingredients:

4 Smaller Potatoes

1 Spiralizer

Seasoning:

Garlic Powder

Garlic Salt

Cracked Pepper

Directions:

Take your Spiralizer and make your potatoes into strings. Now heat up oil, and when it is ready add in your potato strings. Cook till golden brown. Take them out and lay them on paper towel and season them.  Toss to coat. Serve hot.

Patriotic Pie

This makes 2 Pies 

Ingredients:

Crust:

2 boxes of Graham Crackers

1 Stick of butter

1T Sugar

Filling:

1 Box French Vanilla Pudding

1 Can of Blueberry Pie Filling

1 Can of Strawberry Pie Filling

Homemade Whipping Cream:

1 Carton of Whipping Cream

1T Sugar

2 Tsp Vanilla

Pastry Star:

Puff Pastry Sheet

Star Cookie Cutter

Directions:

Crush your graham crackers into crumbs and add melted butter and sugar. Mix till combined. Put it in two pie plates evenly to form a graham cracker crust. Bake for 10 minutes at 350. Take it out and let it cool.  Now, take your pastry puff sheet and cut out two stars. Bake them till golden brown. Take them out and let them cool. 

Make your pudding according to directions and put it in the fridge to chill. While its chilling you can make your whip cream. Mix your whipping cream, sugar and vanilla till it forms a stiff peak. Now take your pudding and take one cup of whip cream and fold it into the pudding. When the crust is cool add about 3 spoon full of pudding and spread it out, then add 1/4 C Blueberry Pie filling and spread it gently. Add more pudding and then add strawberry pie filling. Top it with your pastry star. Now you can either pipe or use a spoon to add whip cream to the top. Keep these in the fridge till it is time to eat.

Brussel Sprout Salad

Ingredients:

1 lb. of Brussel Sprouts Chopped

1 Bag of Spinach

1 lb. of bacon chopped

1 C Shredded Parmesan

Olive Oil

Salt and Pepper to Taste


Directions:

Cut up your Brussel sprouts into four quarters and set it aside and chop up your bacon. Put them on a lined cookie sheet and drizzle with olive oil. Bake this till the bacon is done and the Brussel sprouts are tender. Once you have taken them out, let them rest. Cut up your spinach and put it in a bowl. Add in your Brussel sprout and bacon mixture. Add your shredded parmesan, salt and pepper. Eat and enjoy.

Gluten Free Chocolate Cherry Cookies

Ingredients:

2 1/4 C Gluten Free Flour 

1 Tsp Baking Soda

1 Tsp Salt

1 C Softened Butter

3/4 C Brown Sugar

3/4 C Granulated Sugar

1 Tsp Vanilla

2 Eggs

2 Cups of Chocolate Chips

1 C Chopped Maraschino Cherries


Directions:

In a bowl add your softened butter, both sugars and vanilla. Beat until creamy. Add in eggs one at a time.  Add your flour, baking soda and salt mix and slowly add to batter mixing as you go. Add your chocolate chips and chopped cherries. Bake at 350 until they are start to brown on the edges.  Take out and let them cool. Enjoy!

Gluten Free Pizza Dough

* This flour worked really well for this pizza dough. It definitely feels different than regular flour dough however the taste was so good. Plus, I can eat the pizza without stomach pain. So, it is worth it. 

Ingredients:

1 1/2 C Warm Water
2 1/4 Tsp Yeast
2 Tsp Olive Oil
2 1/2 C Flour
1/4 Tsp Salt
1 Tsp Garlic Powder

Directions:

In a bowl add half cup of warm water, and your yeast. Let it sit for 5 minutes until yeast activates. Then add one cup of water, olive oil, flour, salt and garlic powder. Mix till combined. You can knead it for a few minutes. Put it in a greased bowl and roll it in the oil then cover it. Let it rise for an hour. 

After an hour take your pizza dough and spread it on a greased pizza pan. We fork the dough personally, but you do not have to. It is a part of my Mamaw's recipe though.  Click that link for the rest of the pizza recipe. This dough however can be used for breadsticks and more. I am so happy that I could eat pizza, and it didn't mess with my health.

Chocolate Cherry Shake

Ingredients:

1 Small Container Chocolate Ice Cream

1/2 C Heavy Whipping Cream

1 Can of Cherry Pie filling

Whip Cream

Chocolate to grate

Directions:

In a blender put in your ice cream, heavy whipping cream and 3 T of cherry Pie filling. (Link to turnovers to use the rest of this pie filling). Blend until smooth. Taste to see if it has enough cherry. If not, you can add more.  Pour into a chilled glass. Put whip cream on top and grate with chocolate. Enjoy.

Chocolate Pudding Brownies

 


Peanut Butter Swirl Pudding Brownies

Ingredients:

1 1/4 C Sugar

2 Eggs

1/2 C Oil

1 Cup of Chocolate pudding already made

1 Tsp Vanilla

1/3 C Cocoa Powder

1/4 Tsp Salt

1/4 Tsp Baking Powder

Topping:

1/4 C Peanut Butter

1 C Heavy Cream

Directions:

In a bowl combine your sugar, eggs, oil and pudding. Set aside. In a bowl mix your cocoa, salt, baking powder and flour. Mix till combined and add to pudding mixture. In a greased pan pour in the brownie batter. In a bowl add your peanut butter and heavy cream and whisk till combined. Drop by spoonful and make swirls in the brownie batter.  Bake at 350 till knife comes out clean. Enjoy.

Dark Chocolate Berry Cheesecake

 


Dark Chocolate and Berry Cheesecake with peanut butter crust

Ingredients:

2 packages of cream cheese

1 C Sour Cream

3 Eggs

1/2 C Sugar

1/4 C Flour

1 C dark chocolate melted

Crust:

2 C Crushed Graham crackers

1/3 C peanut butter

4 T butter

Topping:

Frozen or fresh berries

Directions:

Mix your crushed graham crackers, peanut butter and butter and then add it to the bottom of a springform pan. Making a crust. 

In a bowl mix your cream cheese, eggs, sugar, flour and sour cream. Mix till smooth. Take your melted dark chocolate and swirl in while mixing it. Now pour it in a greased springform pan. Bake it at 350 for an hour till knife comes out clean. 

When it is almost done, frozen berries in a pan with about 1/4 c water, till they are thawed and strained. Take out the cheesecake and let it cool completely before topping with berries. Once it's cool add berries and enjoy!

1 1/2 C Flour

2 1/2 Tsp Baking Powder

1/2 Tsp Salt

1/2 C Sugar

1 Egg

1/4 C Oil

3/4 C Milk

2 bananas mashed

Toppings:

1 C Coconut

1/2 C Brown Sugar

4 Tsp melted butter

2 Tsp Cinnamon

Directions:

In a bowl combine your flour, baking powder, salt, sugar, egg, oil and mashed bananas. Mix till combined. Pour into a casserole dish. In a bowl mix your coconut, brown sugar, cinnamon and melted butter. Combine and then add it to the top of the coffee cake.  Bake at 350 for a half hour or until the knife comes out clean. Eat and enjoy

Pizza Bread

Ingredients:

2 C Warm Water

2 1/4 Tsp Yeast

1 T Sugar

1/3 C Olive oil

4-5 C Flour

2 T Sugar

2 Tsp Salt

3 T Pizza Sauce

Filling:

Mozzarella

1 T chopped parsley

1 T chopped basil

Toppings:

Pepperoni

Mozzarella

1/3 C Grated Parm

1/2 stick of butter

1 tsp garlic salt

Directions:

In a bowl add your half cup of warm water, yeast and a tablespoon of sugar. Whisk till combined, and let it sit for 5 minutes to activate. Now add your 1 1/2 c warm water, olive oil, flour, salt, sugar and pizza sauce. Combine till it forms a good dough that isn't dry or to sticky. Let it rise for an hour. Now cut into two sections as this makes two loaves. Take one and roll it in a rectangle. Add mozzarella, parsley and basil. Roll it up and put it in a greased loaf pan. Do the same with the second one. When you have them both done, mixed up melted butter, garlic parm and garlic salt and brush the tops. Next top with pepperoni and cheese. Let it rise till its doubled. Put in the oven at 350 till its golden brown.

Cheddar Bacon Ranch Bread

 


Cheddar Bacon Ranch Bread

Ingredients:

2 c Warm Water NOT hot. 

2 1/4 Tsp Yeast

1 T Sugar

1/3 C Olive Oil

4 C Flour

3 T Sugar

1 Tsp Salt

Filling:
4 T Softened butter

1 packet of Hidden Valley Ranch Dressing Mix

Shredded Cheddar

Real bacon bits

Directions:

In a mixer bowl or regular bowl add your half cup of warm water, yeast and 1 T of sugar. Whisk it and let it sit for 5 minutes. Then add 1 1/2 C warm water, olive oil, flour, sugar and salt. Mix till it forms a ball that isn't to sticky. Put it in an oiled bowl to rise for an hour until doubled in size. Once it is doubled in size take it out and put it on a floured surface. Split into two. Set one aside. Roll it out into a rectangle, spread two tablespoons of butter, and sprinkle ranch dressing mix all over it. Then add your cheddar and bacon. Roll it up tight and put it in a greased baking dish. Do the same for the second loaf.  Let them rise for an hour. bake them at 350 till golden brown.

Buffalo Chicken Rolls

 


Buffalo Chicken Rolls

Ingredients:

Package of Won Ton Wrappers

Water for sealing

Shredded buffalo chicken

(Just shred chicken or buy it shredded and add buffalo sauce)

Oil for frying

Directions:

Take a Won Ton wrapper and around the edges put water this will create a seal. Now take a little bit of the shredded buffalo chicken and put it in the middle. Now take one side and fold it over, and take the other side to fold over, and then fold the last two over.  You can add more water if needed. 

When you get them, all made, heat up a pan with oil. When it's hot add in your buffalo chicken rolls. Cook till golden. Take out and add salt and put on a paper towel to help soak up grease.

Serve with Ranch

Cheddar Garlic Parmesan Knots

 


Cheddar Parmesan Garlic Knots

Ingredients:

2 C Warm water

2 1/4 Tsp Yeast

3 T Sugar

1/3 C Olive Oil

4 C Flour

2 Tsp Garlic Powder

2 Tsp Italian Seasoning

Garlic Mixture:

1 C Grated Parmesan

1 T Garlic Salt

1 stick of butter

1 tsp Basil

1 C Cheddar

Directions:

In a bowl add 1/2 cup of warm water, mix in your yeast and a tablespoon of sugar. Mix to combine. Let it sit for 5 minutes to let the yeast activate. Add in your olive oil, 1 1/2 C warm water, flour, garlic powder and Italian seasonings. Mix till combined and it forms a dough ball. Not dry but not super wet either. Cover it and let it rise for an hour till it has doubled in size. 

Take your dough and knead it for five minutes. Now take balls (fairly decent size) and roll them into ropes and tie them in a knot. Keep doing this till you have finished the dough. Now mix up the garlic mixture all but the cheese and brush the knots with it. Bake them at 350 when they are almost done top them with cheddar cheese. Bake until melted.

Chorizo Braided Pastry

                          


Chorizo Braided Pastry

Ingredients:

1 Package of Pastry Puff Sheets

1 package of Chorizo sausage

1 Pepper 

1 onion

Mild and sharp shredded Cheese

1 stick of butter

Course Sea salt

Directions:

Take a cookie sheet and line it with parchment paper. Lay one pastry sheet on it. Now cook your Chorizo and layer it in the middle. Dice your onions and peppers and place them on the sausage. Top with shredded cheese. Now to get the braided effect you make slits on each side and lay one strip down and grab the other side and lay a strip. Keep alternating till it looks braided. Melt your butter and brush it all over. Sprinkle with sea salt and bake at 375 till golden.

Beef Stir Fry

 

 

Steak Stir Fry

Ingredients:

Frozen Stir Fry Vegetables

1 of Teriyaki Sauce

1/2 C Soy Sauce

1 T Ginger

2 T of Minced Garlic

Directions:

Slice and dice your steak, if it is not cooked, add it to a pan with garlic.  Once it is almost cooked add in your stir fry vegetables, 1/2 c soy, finger and teriyaki sauce. Put the cover on the pan and let it cook till the vegetables are not frozen anymore. Taste and make sure the seasonings are good, and you may need to adjust seasonings if you need.

Pumpkin Pie Shortbread crisp

 


Pumpkin Shortbread Crisp

Ingredients:

Shortbread Crust:

1 C Flour

1 C Powdered Sugar

1 1/2 sticks of butter melted

Filling:

1 Can of Pumpkin 

1/4 Tsp Ginger

1/2 Tsp Cloves

1 Tsp Cinnamon

1 C Powdered Sugar

1/4 C Milk

Topping:

1/2 Stick of butter

1 C Oats

1/2 C Brown Sugar


Directions:

In a bowl combine flour, one cup of powdered sugar, and your melted butter. Mix till it forms a dough. Get some mini dishes oven safe and grease them. Put the shortbread in each one in a thin layer so it will cook. Now make your pumpkin batter and pour it into each mini dish. Place them on a cookie sheet. Take your crumble and top each one with it. Bake at 400 till crust and middle is cooked.

Italian Beef in the crock pot

                                                                 


Italian Beef

Ingredients:

Chuck Roast

1 C sliced banana peppers

2 C beef broth 

1 1/2 Packets of Lois Italian Beef seasoning

1 can of chili peppers


Directions: 

In your crock pot place your chuck roast. Take your broth and add seasoning to it and pour it over the roast. Add in your banana peppers and chili peppers. Cook on low 5-6 hours then on high till it falls apart. Shred it and serve it on mashed potatoes

Andes Mint Chocolate cheesecake

                                                                 


Mint Chocolate Chip Cheesecake

Ingredients:

Crust:

2 C Thin Mints

1/4 C Butter

Cheesecake batter:

2 packages of Andes Mints

2 Boxes of Cream cheese

1/2 C Sugar

1/4 C Flour

1 C Sour Cream

3 eggs

1 Tsp Vanilla

1/4 Tsp Mint Extract

Mint leaves

Directions:

Crush your mint cookies, add in your melted butter and mix it well. Press it into the bottom of a greased springform pan. Bake for 10 min and take it out and let it cool.  In a bowl mix the cream cheese till creamy, then add flour and sugar and mix well. Add eggs, sour cream, vanilla and mint extract. Mix it well. Pour into the springform pan and chop 8 of Andes mints. Sprinkle them all over the cheesecake. Bake 350 for 55 minutes Take it out and set it on a cooling rack. Wait 20 minutes and loosen the springform pan.  

In a double boiler or microwave melt the rest of the mints. Pour it into a baggy and snip the end. Drizzle the melted Andes mints swirled on the cheesecake. Let the chocolate harden and enjoy.

Ingredients:

2 pork loins

Cracked Pepper

Favorite Rub

Directions:

Lay down your two pork loins and add your favorite rub Do a light amount of rub as we will be adding cracked pepper. Now take a bunch of cracked pepper and coat the pork loin. Cook it in the oven at 400 till done or Air Fryer.

Bacon Wrapped Jalapeno

Ingredients:

9 Jalapenos

1 Block of Cream Cheese

Sausage 

2 C Cheddar Cheese

1 Package of Bacon

Directions:

Cut your jalapenos in half and scrape out the seeds. Now brown your sausage. Drain off the grease and add it to a bowl, add your cream cheese and cheddar. Mix till combined. Take and scoop a mixture in each jalapeno. Take a slice of bacon and wrap each stuffed jalapeno. Bake at 400 on an oven safe cooling rack on top of a cookie sheet, add your jalapenos to the rack. Bake till bacon is crispy.

Ingredients:

12 Won Ton Wrappers

3 Apples

2 T Apple Pie Spice

1/4 C Sugar

Topping:

1/4 C Oats

1/3 C Brown sugar

1/2 T of Butter

Directions:

Start cutting up your apples into chunks, you can leave peel on if you want. Cover the apples with just enough water. Add sugar and apple pie spice, let it boil till almost soft. Drain then set aside. Take your won ton wrappers in muffin tins so that it forms a cup. Bake them till they harden. Take it out and set it on a cookie sheet. Fill with apple mixture and top with the oat mixture. Grab a bowl and mix in your powdered sugar and milk. Whisk till smooth and drizzle over the top. Enjoy

Rainbow Pasta Salad

                                                                    


Rainbow Pasta Salad

Ingredients:

1 box of Rotini Noodles
2 C Cherry Tomatoes chopped
1/2 Onion Chopped
5-6 Basil Leaves
1 C of Chopped Fresh Spinach
Feta 
(I didn't have any when I made this, but it was an ingredient I wanted to add)

Dressing:
1/2 C Olive Oil
1/4 C Apple Cider Vinegar
Splash of Red Wine Vinegar
2 T Dijon Mustard
3 T Chopped garlic
1 Tsp Pepper
1/4 Tsp Salt
1 Tsp Dill
1 Tsp of Italian Herbs
1 T Sugar

Directions:
Boil the noodles till they are the way you like them. While those are boiling chop up your tomatoes, onion, basil, spinach and if you have feta add it.  Strain your noodles and run cold water over them till they cool down. Put it in a bowl, add your tomatoes, onion, basil, spinach and feta. Mix till combined. Now you can work on the dressing. 
Combine all the ingredients in a bowl and whisk till combined. Pour it over the pasta veggie mixture. Stir till everything is coated. You can eat or keep it in the fridge. This would also be a great idea for cooking out.

3 C Shredded chicken

(Homemade or rotisserie)

1 1/2 C Brown or white rice

1 3/4 C Chicken broth 

1 Can of diced tomatoes with peppers

1/2 T Cumin

1 Tsp Chili Powder

1 1/2 C Salsa

2 C Shredded Cheese

Toppings:

Sour Cream

Chopped Green Onion

Diced fresh tomatoes 

Tortilla strips

Directions:

Shred your chicken and set it aside. In a deep skillet add your uncooked rice, chicken broth, seasonings, and diced tomatoes. Cook on a medium to low till the rice is tender and has absorbed all the chicken broth. Add in your salsa. Put it in a large bowl add half cup of cheese and chicken and combine. Take a large glass baking dish out and put it in it. Top with 1 1/2 C of cheese. Bake till its bubbling and cheese is melted. 

Serve with sour cream, tortilla strips, tomatoes and green onions.

Cucumber Feta Salad

Ingredients

1 Cucumber 

2 Tomatoes

1 onion 

1 container of feta

1/2 C Red Wine Vinegar

1/2 C Olive Oil

1 T Sugar

2 T Dill

1 T Italian Seasoning

2 T Parmesan

Salt and Pepper to taste

Directions:

Take and peel your cucumber and chop it into thin pieces. Then chop your tomato removing the seeds. Add it to the cucumbers in a bowl. Now cut your onion thin and add them in.  Add your crumbled feta. In a bowl mix your red wine vinegar, olive oil, sugar, dill, Italian herb seasoning, parmesan, salt and pepper to taste. Whisk till combined and pour over veggies and mix vegetables up. This is even better the second day.

Cheddar Sour Cream Drop Biscuits

Ingredients:

2 C Flour

1 T Baking Powder

1 Tsp salt

1/3 C Butter cut small

1 C Cheddar Jack Shredded

1/4 C Sour Cream

2 Tsp Parsley

2 Tsp Dill

1 Tsp garlic salt 

1 C Milk

Directions:

In a bowl combine your flour, salt and baking powder. Add your dill, garlic powder and parsley. Add your chopped butter using a pastry cutter or a knife and a fork to make it into crumbles.  Add in your sour cream and milk. Mix to combine and then add your cheddar stirring gently. Take a spoon and scoop them and put them on a cookie sheet. Bake them at 350 till they turn golden.

 Garlic Tomato Pasta with Fresh Spinach

Ingredients:

Spaghetti or Linguini

Sauce:

4 T butter

3T Garlic

2 T Garlic Oil if you can't find that use olive oil

Sprinkle of course ground pepper

1 T Garlic Salt

1 C of Diced tomatoes

1/2 C Fresh Spinach

Directions:

In a saucepan boil your pasta, while it is cooking you can work on the sauce. In a skillet melt your butter. Add garlic, ground pepper and sea salt. Cook till heated through. If your pasta is done, drain it and add it to the skillet. Toss till combined. Add in your cup of diced tomatoes. Cook till the diced tomatoes and all the flavors combine. Put it in a bowl and add fresh chopped spinach to the pasta. Top with basil and parsley.

Wedge Salad with Sundried Tomato Basil Dressing

Ingredients:

Iceberg Lettuce

Cheese

Any other toppings you choose

Sundried Tomato Basil Ranch

Ingredients:

8 basil leaves

3-4 cloves of garlic

4 spoons of Sundried tomatoes in oil

2 T Dill

2/3 C Mayo

1/2 C Buttermilk

1/2 C Sour Cream

1 Tsp Salt

2 Tsp Pepper

Directions:

In a food processor or blender put your garlic in and mince it really fine. Add basil and sundried tomatoes. Blend it till combined.  In a bowl mix your mayo, buttermilk and sour cream. Whisk till combined. Add in your dill, salt and pepper, and fold in your sundried tomato mixture. 


Now cut your lettuce into wedges, drizzle the dressing over the wedge add cheese and other toppings. Enjoy!

Peanut Butter Cup Pie

 


 Peanut Butter Cup Pie

Ingredients:

Chocolate Cookie Crust:

2 C crushed chocolate cookies

1/2 stick of butter melted

Filling:

1 Container of Cool Whip

1 block of cream cheese

1 jar of peanut butter

1/2 C powdered Sugar

Topping

1 Bag of Chocolate chips

1/2 C heavy cream

Directions:

In a bowl mix your crushed cookie and butter and put it in a greased pie plate. Bake it for 5 minutes. Take it out and let it cool. While it is cooling, we can start on the filling. In a bowl combine your cool whip, peanut butter and cream cheese, powdered sugar and mix it well. Pour it into the cookie crust that has cooled. Now you can work on the topping. 

Heat your heavy cream to just about a boil. Then pour on top of the chocolate chips. Stir till combined. You do not want it super thin. Pour it on top of the pie and put it in the freezer to set. Maybe an hour. Enjoy!

Sloppy Joe's Fries

 


Sloppy Joe Fries

Ingredients:

1 Package of your favorite fries
 (Recipe is linked to Pioneer Woman Recipe. It is so good.)
Cheddar Jack Cheese shredded

Directions:
Make your sloppy joes, either homemade or the can and set aside. This would also work with leftovers. Two meals out of one. I love those. Cook your fries in the oven. When they are close to being done, heat up the sloppy joes and spread it over the fries and top with cheese. Bake at 350 till cheese is melted and sloppy joes are hot. Eat and enjoy.

Funnel Cake


Chocolate Funnel Cake

Ingredients:

Oil for Frying

2 C Flour

3 Tsp Cocoa Powder

1 Tsp Baking Powder

1 Tsp Vanilla

1/2 Tsp Salt

1 1/2 C Milk

2 Eggs

Toppings:

Melted Chocolate

Powdered Sugar


Directions:

In a saucepan fill it halfway up with oil and heat it up. You need it hot enough that when you add the funnel cake it starts frying quickly.  In a bowl combine your flour, cocoa powder, baking powder and salt. Mix well and add in your milk and egg.  Whisk till smooth. Now I couldn't use a funnel, so I took a plastic condiments bottle and used it. You can tell if your oil is hot enough by adding a tiny bit of batter in and see if it fries fast. If it does you can continue. Fill up the condiments bottle or a funnel of batter and make a swirl pattern in the oil. Do it fast. When you have it big enough let it fry then flip it over and let it cook a bit more. Take it out and let it on a paper towel. In a microwave or double boiler melt chocolate and swirl it over the funnel cake, and dust with powdered sugar. Eat and enjoy this lovely treat.

Chocolate Potato Chip Pie

This is everything you didn't know you needed!

Ingredients:

Short Bread Crust:

2 C Flour

2 C Powdered Sugar

3 Sticks of melted butter

Filling:

Chocolate Pudding

Sauce:

1 C Reeses Pieces

1 Packet of Hot Cocoa Mix

1 T of butter

1/2 C milk

Toppings:

1 C Coconut

1/2 C walnuts

1 C crushed potato chips

Directions:

Mix all the short bread crust ingredients till it forms a ball of dough. In a greased tart pan or pie plate add your dough and spread it evenly around making a good crust. Put it in the oven at 350 till the crust is done. Let it cool completely. While it is baking you can work on the sauce. 

In a pan add one cup of reeses pieces and let it melt down, add your hot cocoa mix, butter and milk. Whisk till combined. Let it sit to cool a bit.  Now make your pudding according to the box and make sure it sets and then pour it into a cooled off shortbread crust. Then add your sauce over the top. Now take your coconut, walnuts and crushed potato chips and sprinkle them over the top. Put it in the fridge till it sets. Enjoy!

Lemon Bars

Ingredients:

1 C All Purpose Flour

1/2 C Butter softened

1/4 C Powdered Sugar

2 Tsp Lemon Peel

4 T Lemon Juice

1/2 Tsp baking powder

1/4 Tsp Salt

2 eggs

Directions

In a bowl put your flour, powdered sugar, softened butter and lemon zest. Mix well and smash it in the bottom of a greased 8x8 baking dish. Bake 15 minutes then take out of the oven.  In a bowl mix in 4 T of lemon juice, 1 tsp of zest, eggs, baking powder, salt, and sugar. Mix for 5 minutes till its light. Pour it on the crust and bake at 350 degrees for 30 minutes. Cool completely and dust with powdered sugar.

No Bake French Vanilla Cherry Parfaits

Ingredients:

1 package Graham Crackers
Box of French Vanilla pudding
Cherry Pie Filling

Directions:

In a bag add your graham crackers and crush them into small pieces. Add them to a glass or Sundae glass. Open your cherry filling and add a layer. Then make your French vanilla pudding and add a layer. repeat till you reach the top. You will want to end up with a pudding layer on top. You can sprinkle some graham cracker on top if you want. This is so easy and so good. It is great for summer.

Bow Tie Ranch Bacon Pasta Salad

Ingredients:

1 box of Bow Tie Pasta

1 Bottle of Ranch Dressing

1 1/2 C Chopped bacon

2 Tomatoes diced 

2 cucumbers peeled and diced

2 T Dill 

Directions:

Boil your pasta according to directions. While its boiling, fry up your bacon and chop it into pieces, and then chop your vegetables. When the pasta is done, drain it and rinse with cold water.  Put it in a bowl and add your chopped vegetables, bacon, dill and ranch. Mix it up till all is combined.
